These vanilla beans will give your creme brulee, buttercream frosting and ice cream deep, full flavor and distinctive "little black specks." Add vanilla beans to chocolate desserts to enhance the cocoa flavor.
To use these beans, cut the bean lengthwise, scrape out the dark, pulpy inside and add to recipe. Don't discard the remaining bean pod. Store it in a jar with sugar to scent the sugar for coffee, tea or baking. You can also pulse the pod with sugar in a food processor to make vanilla sugar--great for making chocolate chip cookies or brownies!
