Sumac is grown in the Middle East, and has traditionally been used in Middle Eastern dishes in the ways that lemon or vinegar would be used by Western cooks. Ground Sumac gives a sourness to dishes.
Mix it with strained yogurt to make a wonderful light sauce. Sumac can be added to marinades, salad dressings or rubbed on meats before grilling.
